										<content:encoded><![CDATA[<p>In 2015, our restaurant brewery &#8220;SALM BRÄU&#8221; received a unique offer to develop the already derelict former &#8220;Belvedere Stöckl&#8221; in the <strong>historic Schwarzenberg Garden</strong> into a <strong>new restaurant brewery</strong>. The only condition of the landowner, Prince Karel von Schwarzenberg, was that an original Czech dark beer should also be brewed in this brewery.</p>
<p>This part of the Schwarzenberg Garden had become overgrown after the &#8220;Belvedere Stöckl&#8221; went bankrupt. The Stöckl building was also in a poor condition and it was far too small for a restaurant. However, as there was an approved building plot next to the Stöckl building Vienna&#8217;s most renowned architectural office, Hoppe, was commissioned to plan the project with the greatest consideration for history and botany.</p>
<p>It&#8217;s not surprising that an opposition to this project formed. Everything from odour nuisance to noise and light emissions was being raised with incredible vehemence by the opponents of the project. Hardly a week went by without the project being reported on Austrian national TV and various lawyers trying to make a name for themselves. <strong>In the end, however, the battle for the permits was won in court and the project was completed in 2019</strong>.</p>
<p>At some point after the opening in December 2019, one of the residents critical of the project asked when the brewery would finally start brewing and he was very surprised by the fact that the brewery had already been in operation since October. <strong>No noise nuisance, no odour nuisance, no other negative impacts</strong> that had been raised against the project in court.</p>
<p>The brewing equipment is <strong>SALM&#8217;s latest generation</strong> based on a <strong>20 hl brewhouse</strong> <strong>with</strong> computer control <strong>Brewmatic 07</strong> <strong>and a fermentation and storage cellar control system and automatic wort cooling. </strong>It has an <strong>annual capacity of 4000 hl</strong> and can also be <strong>operated remotely</strong>.</p>

										<content:encoded><![CDATA[<p>At the beginning of 2010 we received a call from Dr Martin Bém from Singapore asking whether it was possible to realise a brewery on <strong>the rooftop of a skyscraper</strong>. Also, there wouldn’t be much time to think about it as others were also interested in this roof space. Having clarified that the building has a backbone (elevator shaft) made of reinforced concrete, it was agreed that the project was feasible. However, the only requirement was that the entire equipment had to be placed rather close to the backbone and that the floor in the area of the brewhouse and the uni-tanks had to be reinforced.</p>
<p>Contrary to Europe, the authorities in Singapore were very helpful and a <strong>few months later an adapted version of a Salm brewing system was shipped to Singapore</strong>..</p>
<p>Within one week of the containers’ arrival customs was cleared. In the meantime, a special crane was set up on the rooftop of the skyscraper, several glass elements were removed and the building site was prepared. The <strong>chronology of the lifting had already been planned in Vienna</strong> and the components marked with chronological numbers.</p>
<p><strong>The whole procedure to lift up the brewing equipment only took one day. </strong>It then took three more weeks to install the equipment and three months later the restaurant was ready as well. In <strong>December 2010 the world’s highest urban brewery was opened.</strong></p>
<p><strong>LeVeL33</strong> is not a typical restaurant brewery. With a breath-taking view from the open terrace on the 33<sup>rd</sup> floor to Marina Bay, this trendy and fancy restaurant also offers a large selection of wines. The maximum capacity of the system with one type of beer is 2000 hl, as <strong>four to five types</strong> are brewed, the actual <strong>capacity</strong> produced is approx. <strong>1000 hl</strong>. This <strong>quantity meets the demand perfectly</strong>.</p>
